INGREDIENTI
  • 500 g of Manitoba flour
  • 300 ml of lukewarm water
  • 2 tablespoons of brown sugar
  • 1 level tablespoon of baking soda
  • 7 g of dehydrated baker’s yeast
  • 1 egg white
  • 1 level teaspoon of salt
  • mixed seeds
  • olive oil
COME PROCEDERE
  1. In a small bowl, mix the yeast with the lukewarm water and stir with a fork for a few seconds.
  2. In another bowl, combine the flour, the sugar and the salt. Add the water with the yeast and mix well.
  3. Transfer the dough to a flour-dusted pastry board and knead for at least 10 mins. or until you have a smooth and elastic dough.
  4. Give a round shape to it and then place it in a large greased bowl.
  5. Cover the dough with cling film, or a damp rag, and let it rise for at least 1 hour in a warm place.
  6. When the dough is risen, divide it into 8/10 little balls (depending on the size you want your bagels).
  7. Arrange them at intervals in a baking sheet, previously lined with baking paper.
  8. Cover with a rag and let them rise for others 30 mins.
  9. Use a floured finger to make a hole in the centre of each bagel and then gently enlarge them a little.
  10. Preheat the convection oven to 160°C.
  11. Fill a pot with abundant water and put it on the stove. When the water boils, add the baking soda. Using a skimmer, boil a bagel at a time for 1 minute and half, turning them halfway through.
  12. Drain the bagels and place them on a clean rag.
  13. Gently dry them with another rag.
  14. Transfer the bagels to the baking sheet, previously lined with baking paper. In a small bowl, beat the egg white with a fork and brush their surface.
  15. Scatter the mixed seeds over the bagels and bake for about 20/25 mins. or until they are golden brown.
  16. Allow them to cool completely on a wire rag before serving.
  17. You can also freeze your bagels for a couple of months.
