Cherry Tomato Bruschetta

INGREDIENTI

  • For the tomatoes
  • Cherry tomatoes
  • extra virgin olive oil
  • salt
  • sugar
  • garlic
  • oregano, discretionary

  • For the toasted bread

  • loaf of bread
  • extra virgin olive oil
  • 1 clove of garlic, discretionary
  • fresh goat’s cheese
  • pepper
  • fresh aromatic herbs (chives, mint, basil)
COME PROCEDERE
  1. For the cherry tomatoes
  2. Line a baking sheet with some baking paper, wet and squeezed.
  3. Preheat the oven to 100°C.
  4. Wash the cherry tomatoes and put them in the baking sheet.
  5. Add a drizzle of oil and sprinkle with salt, sugar and oregano.
  6. Bake for about an hour and half.
  7. You can use these cherry tomatoes to flavour your pasta or to prepare your skewers (see picture below).
  8. For the toasted bread
  9. Heat a cast-iron grill pan.
  10. Cut the loaf into thick slices.
  11. Rub a clove of garlic on both the sides of the slices of bread.
  12. Add a drizzle of oil and toast them.
  13. Cook for a couple of minutes per side or until the bread is well toasted.
  14. Set aside.
  15. Spread the goat’s cheese on the slices of bread; add the cherry tomatoes confit and, according to your taste, the fresh aromatic herbs.
  16. Add a drizzle of oil and serve immediately.
  17. Enjoy your meal!
