Sweet and sour baby eggplants (recipe also in English on OPSD blog). Sweet and sour baby eggplants are ideal as a simple and tasty vegetarian side or main dish, they are easy and quick to make, try them now!

INGREDIENTI
  • baby eggplants
  • pine nuts
  • raisins
  • honey
  • extra virgin olive oil
  • cider vinegar
  • salt
  • red hot chili pepper
  • fresh oregano
COME PROCEDERE
  1. In a small saucepan, toast the pine nuts. Set aside.
  2. Heat a grill pan over medium-high and sprinkle a handful of table salt on it.
  3. Wash the eggplants, dab with kitchen towel and cut them into 4 sections.
  4. Brush them with a trickle of oil and grill them turning occasionally until tender and lightly charred.
  5. In a small bowl, combine cider vinegar, extra virgin olive oil, honey, salt and raisins.
  6. Transfer the grilled eggplants to a serving dish and drizzle the sweet and sour over them.
  7. Add the toasted pine nuts, the hot chili pepper fine-grained and a dash of fresh oregano.
  8. Serve your sweet and sour baby eggplants with toasted bread and… enjoy your meal!
