INGREDIENTI
baby eggplants
pine nuts
raisins
honey
extra virgin olive oil
cider vinegar
salt
red hot chili pepper
fresh oregano
COME PROCEDERE
In a small saucepan, toast the pine nuts. Set aside.
Heat a grill pan over medium-high and sprinkle a handful of table salt on it.
Wash the eggplants, dab with kitchen towel and cut them into 4 sections.
Brush them with a trickle of oil and grill them turning occasionally until tender and lightly charred.
In a small bowl, combine cider vinegar, extra virgin olive oil, honey, salt and raisins.
Transfer the grilled eggplants to a serving dish and drizzle the sweet and sour over them.
Add the toasted pine nuts, the hot chili pepper fine-grained and a dash of fresh oregano.
Serve your sweet and sour baby eggplants with toasted bread and… enjoy your meal!
