This rich chocolate cheesecake is accented with everyone's favorite Irish stout beer, Guinness. Is so creamy and very delicious!

INGREDIENTI
  • For the base
  • 150 g of butterscotch biscuits
  • 45 g of unsweetened cocoa powder
  • 15 g of granulated sugar
  • 30 g of melted butter
  • For the Guinness dough
  • 150 g of dark chocolate, chopped
  • 15 g of heavy cream
  • 110 g of cream cheese (philadelphia)
  • 90 g of granulated sugar
  • 60 g of sour cream
  • 2 eggs
  • the seeds of ½ vanilla bean
  • 125 ml of Guinness
COME PROCEDERE
  1. Use a food processor to crush the biscuits and the cocoa powder. Add the sugar and the melted butter and mix well until they are combined into an homogeneous mixture.
  2. Line the bottom of a springform baking tin (Ø 18 cm) with baking paper.
  3. Place the mixture on the bottom of the tin, pressing well with the back of a tablespoon.
  4. Chill in the fridge. Meanwhile, prepare the Guinness dough.
  5. Preheat the oven to 180°C.
  6. Melt the chocolate and the heavy cream in a double saucepan. Remove from heat and allow them to cool completely.
  7. In a large bowl, beat the cream cheese with an electric hand mixer for a few minutes.
  8. Add the sugar, the melted chocolate and cream mixture, the sour cream and the vanilla seeds. Mix well until combined.
  9. Add an egg at a time, mixing well after each addition.
  10. Fold the Guinness into the mixture mixing well until combined into a smooth and homogeneous dough.
  11. Pour the cake mixture into the tin, over the biscuit base, and bake for about 50/55 minutes or until a wooden toothpick inserted in the middle of the cake comes out with some moist crumbs.
  12. Allow the cake to cool inside the oven, turned off and slightly opened, for at least 1 hour since it is quite a damp cake and it could collapse.
  13. Once it is completely cool, keep in the fridge overnight.
  14. The cheesecake can be served with whipped cream or soft fruit or vanilla ice cream but it tastes delicious plain too.
