INGREDIENTI
For 10 crepes
250 g of milk
125 g of flour
30 g of melted butter
2 medium eggs
a pinch of salt
For the stuffing
1 pear
1 head of radicchio
walnut kernels
30 g of butter
honey
2 tablespoons of lemon juice
Gorgonzola cheese
black pepper
COME PROCEDERE
Make the crepes
In a bowl, beat the eggs with a hand whisk. Sift the flour and the salt and add them to the eggs mixture, beating well.
Gradually add the milk and the melted butter, stirring well to dissolve possible lumps.
Refrigerate the batter for at least 30 min.
Heat a non-stick pan over medium heat and grease it with a knob of butter.
Pour a tablespoon of batter quickly into the pan turning and tilting it to coat its bottom evenly with the batter.
Cook on both sides for some minutes until the top of the crepe appears set and the bottom is firm and golden brown.
Transfer the crepe to a plate and cover it with baking paper.
Repeat with the remaining batter, greasing the pan lightly with a knob of butter as needed (every 2 or 3 crepes).
Set aside the crepes.
Make the stuffing
Wash the pear, cut it in half and remove the seeds.
Cut it again into 6 thick slices and set aside.
Wash the head of radicchio and cut it in half. Remove its toughest section and break the leaves into pieces.
In a large non-stick pan, heat the butter and add the pear cut into slices, the walnut kernels and half of radicchio.
Coat with honey and lemon juice and cook for some minutes until the pear is caramelized.
Remove from heat, add the remaining radicchio and stir well.
Spread the stuffing on the crepes, add some diced Gorgonzola cheese and, on the basis of your taste, a grind of black pepper.
Serve immediately and … enjoy your meal!
