An easy, wholesome and rustic multigrain bread made with Guinness and Goji berries rich in taste and with an high dietary value. It’s perfect for brunch - combined with cheese or cold cuts - or breakfast - combined with fruit jam or marmalade - but it’s excellent also alone. Enjoy!

INGREDIENTI
500 g of 7 grain dark bread mix
7 g of dry baker’s yeast
300 ml of Guinness
1 tablespoon of acacia honey
1 teaspoon of anise seeds
100 g of Goji berries
salt
extra virgin olive oil for the loaf pans
rolled oats for coating
COME PROCEDERE
In a large mixing bowl, combine the bread mix and the yeast.
Gradually add Guinness and honey and stir well for some minutes until the ingredients are full incorporated.
Add the salt, the anise seeds and Goji berries and knead until the dough is smooth and elastic.
Spread the rolled oats onto a sheet of baking paper.
Divide the dough into 4 equal parts and roll them in the oats until evenly well-coated.
Grease four small loaf pans with oil and transfer the loaves to them.
Cover with cling film and let them rise for at least 2 hours at room temperature.
Preheat the convection oven to 200°C.
Using a sharp knife, score the surface of the loaves.
Bake for 10 minutes then lower the temperature at 180°C and bake again for 15 minutes or until a wooden toothpick inserted in the highest point comes out clean.
Turn out the loaves onto a wire rack and allow them to cool before serving.
NOTE
If you prefer, you can shape only one loaf of bread but, in this case, remember to adjust the cooking time.
