Chocolate cherry brownies (recipe also in English on OPSD blog). A delicious and gooey chocolate cherry brownies that will satisfy any chocolate lover. Try my recipe and taste this amazing dessert just fresh out of the oven or with a nice scoop of vanilla ice cream!
  • 100 g of dark chocolate (70%)
  • 200 g of butter (or 180 ml of sunflower oil)
  • 180 g of brown sugar
  • 150 g of caster sugar
  • 4 large eggs
  • 125 g of unsweetened cocoa powder
  • a pinch of salt
  • 120 g of self-rising flour
  • 250 g of pitted cherries
  • 2 tablespoons of Kirsch
  • icing sugar (discretionary)
  • vanilla ice cream (discretionary)
  1. Preheat the oven to 170°C and line a squared tin (cm 20x20) with parchment paper, wet and squeezed.
  2. Melt the chocolate and the butter together in a double saucepan over a low heat (if you prefer to use oil instead of butter, just melt the chocolate and add the oil later). Remove from heat and add the sugar (both brown and caster). Stir well until the sugar has dissolved.
  3. Add an egg at a time mixing well after each addition.
  4. Sift the cocoa powder and a pinch of salt and add them to the mixture. Stir well.
  5. Fold the sifted flour into the cake mixture and stir until well combined.
  6. Finally, add also the cherries and the Kirsch stirring gently until incorporated.
  7. Pour the cake mixture into the prepared tin and bake for about 35-40 minutes or until a wooden toothpick inserted in the middle of the cake comes out with some moist crumbs.
  8. Allow the cake to cool completely in the tin before removing.
  9. Use a round-shaped cookie cutter to cut some small disks out of the cake.On the bases of your taste, you can sprinkle them with icing sugar and serve with a nice scoop of vanilla ice cream.
