INGREDIENTI
  • 300 g of self-raising flour
  • 200 ml of milk
  • 175 g of butter
  • 175 g of brown sugar
  • 140 g of honey
  • 2 large eggs
  • ½ teaspoon of baking soda
  • 1 teaspoon of ginger and cinnamon ground (discretionary)
  • 500 g of plums
  • 1 tablespoon of melted butter (to grease the baking tin)
  • 2 tablespoons of brown sugar
COME PROCEDERE
  1. Line a baking tin (Ø cm 23) with baking paper.
  2. Grease the baking paper with the melted butter and sprinkle 2 teaspoons of brown sugar on the bottom of the baking tin.
  3. Wash and dry the plums. Cut them in half, take off their pits and place them on the bottom of the baking tin.
  4. In a bowl, beat the butter, the sugar and the honey - diluted with 1 tablespoon of water - with an electric mixer.
  5. Add an egg at a time, beating well after each addition.
  6. Add also the milk.
  7. Sift the flour with the baking soda, the ground ginger and the ground cinnamon and stir well until combined.
  8. Cover the plums with the cake mixture and bake for about 45-55 mins at 180°C or until a wooden toothpick inserted near the centre of the cake comes out clean.
  9. Allow the cake to cool in the tin for some minutes before removing and cooling completely on a wire rack.
  10. Serve warm.
