INGREDIENTI
  • For the spring rolls
  • 1 roll of phyllo pastry
  • 1 Chinese cabbage
  • 4 little carrots
  • 1 leek
  • 1 shallot
  • 1 clove of garlic
  • soybean sprouts
  • soy sauce
  • seed oil
  • For the sweet and sour sauce
  • 200 g of water
  • 120 g of apple vinegar
  • 80 g of sugar
  • 60 g of tomato puree
  • 1 teaspoon of cornstarch

  • fresh mint
COME PROCEDERE
  1. Prepare the sweet and sour sauce (*)
  2. Put all the ingredients into a pot. Bring to the boil and cook for approximately 10/15 mins.
  3. Allow the sauce to cool down and then keep in the fridge.
  4. Prepare the spring rolls.
  5. Clean the vegetable and cut them into julienne strips. Set the clove of garlic aside.
  6. In a wok (or in a large non-stick pan) heat a couple of tablespoons of seed oil, add the vegetable and the garlic and cook over a high heat for about 8/10 mins.
  7. Add 1 or 2 tablespoons of soy sauce, the soybean sprouts and mix well.
  8. Allow the filling to cool down completely and then remove the clove of garlic.
  9. Meanwhile, cut some square-shaped (cm 10x10) out of the phyllo pastry.
  10. Place the filling as shown below.
  11. Heat a pan with oil and once the oil is hot, drop the spring rolls, one by one, and fry until golden brown.
  12. Drain them on paper towel and serve them immediately with the sweet and sour sauce, the soy sauce and, if you want, the sesame seeds.
  13. On the basis of your taste, you can also try them with lime and fresh mint.
NOTE
(*) The sweet and sour sauce has to be prepared a few hours before you make the spring rolls. Keep it in the fridge until it’s time to serve. Cold, it’s the perfect combination with the hot and crisp spring rolls..
Instead of frying the spring rolls, you can cook them in the oven. In this case, remember to brush their surface with a trickle of oil. Bake at 180°C for about 10/12 mins.
You can also freeze the spring rolls before cooking them.
