Using a sharp knife, cut off a slice of watermelon right down the middle, about 2-3 cm thick.
Peel the avocado and, using a vegetable corer, get some little balls from its pulp. Drizzle them with lemon juice and set aside.
Cut the watermelon slice into 4 or more wedges and top them with the feta cheese cut into small pieces, the avocado, the black olives, the aromatic herbs and a reduction of balsamic vinegar.
Serve cold.
