INGREDIENTI
INGREDIENTS FOR 8 LITTLE PIZZAS
500 g of flour
400/420 ml of lukewarm water
60 g of middlings
40 g of sourdough starter
15 g of wheat germ
3,5 g of dehydrated baker’s yeast
10 g of salt
2 tablespoons of extra virgin olive oil
INGREDIENTS FOR THE GARNISH
roasted pumpkin
tossed broccoli
red onion cut into thin slices
diced feta cheese
grated Parmesan cheese
extra virgin olive oil
COME PROCEDERE
In a large bowl sift the flour, the sourdough starter, the dehydrated baker’s yeast, the wheat germ, the middlings, the oil and the lukewarm water. Mix well until combined.
Add the salt and knead for some minutes, until you have a smooth and homogeneous dough.
If necessary, add to the dough other water little by little but don’t exceed the recommended doses.
Transfer the dough to a flour-dusted bowl. Cover with clinging film and a damp rag and let it rise inside the oven (turned off but with the light on) for at least 2 hours.
Divide the dough into 8 balls and knead each of them for some minutes on a pastry board previously covered with flour.
Cover again with clinging film and a damp rag and let them rise inside the oven (turned off but with the light on) for 30 minutes/1hour.
Preheat the convection oven to 230°C.
Roll the pizza dough balls into rough circles.
Cover a baking sheet with baking paper and then transfer the little pizzas to it. Drizzle with oil and bake for about 10/12 mins.
Take the little pizzas out of the oven and garnish them on the basis of your taste.
Add a trickle of oil and serve immediately.
