Traditional Italian recipe: vanilla pastry cream (crema pasticcera).

INGREDIENTI
  • 500 ml of milk
  • 5 large egg yolks
  • 1 vanilla bean
  • 140 g of granulated sugar
  • 25 g of plain flour
  • 30 g of corn flour (or rice flour)
COME PROCEDERE
  1. Pour the milk and the vanilla seeds into a pot and bring to the boil.
  2. Filter the milk and keep it warm.
  3. In the meanwhile, beat the egg yolks with the sugar until the mixture is light and fluffy.
  4. Fold the flour and the corn flour, sifted together, mixing well.
  5. Drizzle the mixture in the warm milk. Put on the stove, over low heat, and cook the custard for about 5 mins. Stir until it begins to thicken.
  6. Remove from heat and give the custard some minutes to cool down.
  7. Pour the custard into a bowl and cover it with cling film.
  8. Once it’s cooled, use immediately or store in the fridge for two days maximum.
