WHOLE WHEAT PIZZA WITH STRACCHINO AND GRILLED VEGETABLE (Recipe also in English on OPSD blog) This crispy whole wheat pizza dough makes a delicious canvas for all kinds of tasty toppings, is a fluffy, soft pizza crust made with 100% whole wheat flour, stracchino cheese and grilled vegetable. Healthy and delicious!

INGREDIENTI
  • For 2 pizzas (cm. 20)
  • 200 g of whole wheat flour
  • 100 g of Manitoba flour
  • 300/400 ml of lukewarm water
  • 4 g of dehydrated baker’s yeast
  • 1 teaspoon of sugar
  • 2 tablespoons of extra virgin olive oil
  • a pinch of fresh black pepper, ground
  • For the garnish
  • 200 g of stracchino
  • tomato sauce with basil, just enough
  • grilled vegetable (zucchini, eggplants, bell peppers)
  • extra virgin olive oil
  • toasted pine nuts (discretionary)
COME PROCEDERE
  1. In a large bowl sift the flours together with the yeast. Add the sugar, the oil and the water and combine well.
  2. Add the black pepper and knead with your hands for some minutes, until the dough is smooth and homogeneous.
  3. If necessary, add to the dough other water little by little, but don’t exceed the recommended doses.
  4. Transfer the dough to a flour-dusted bowl.
  5. Cover with a clean rag and let it stand for at least 30 mins.
  6. Take back the dough, knead it for some minutes on a pastry board, previously covered with flour, and let it to rise again for 30 mins.
  7. Divide the dough into two balls and let them to rise inside the oven turned off but with the light on for 1 hour and half.
  8. Preheat the convection oven to 250° C.
  9. Roll the two pizza dough balls into rough circles.
  10. Cover a baking sheet with some baking paper and place the pizzas.
  11. Pour the tomato sauce, a trickle of oil and bake for about 10 mins.
  12. Take back the pizzas from the oven and put some small pieces of stracchino on them.
  13. Bake again for 5/7 mins. until they are golden brown and the stracchino is lightly melted.
  14. Before serving, garnish your pizzas with the grilled vegetable, a trickle of oil and, on the basis of your taste, the toasted pine nuts.
  15. Serve immediately.
