INGREDIENTI
1 ready-rolled puff pastry sheet
200 g of stracchino
½ lemon (juice and zest)
3 tablespoons of honey
leaves of fresh lemon thyme
6 heads of endive, halved lengthways
2 teaspoons of brown sugar
extra virgin olive oil
COME PROCEDERE
Preheat the oven to 200°C.
In a large non-stick pan heat some extra virgin olive oil and brown the heads of endive until they are golden and tender on each side. Add the lemon juice and a teaspoon of brown sugar and cook until all the liquid has evaporated.
Unroll the puff pastry sheet on the baking sheet and lightly score a 1,5 cm border around the edge. Spread ⅔ of stracchino over the tart inside the border, add the endive, the remaining stracchino and another teaspoon of brown sugar.
Fold up the edge of the puff pastry over the filling and bake for approximately 15 mins.
Meanwhile, blend the honey with some leaves of lemon thyme, a drizzle of lemon and the grated lemon zest.
Take back the tart from the oven and, with a basting brush, drizzle some dressing over it. Bake again for about 8 mins, or until the pastry is puffed, crisp and golden.
Before serving, drizzle the remaining dressing over your tart.
