Dice the butter and put it into the food processor. Add the sugar and beat until the mixture is light and fluffy.
Separate the egg whites and put them aside. Add a yolk at a time, mixing well after each addition. Then, add the zest from a lemon, grated, the milk, the flour, the baking powder and the salt. Mix well.
Wash the nectarines, dry and cut them into thin slices. Add them to the cake dough. Remember to keep some slices of nectarines for the garnish of your cake.
Whisk the egg whites until stiff and add them to the dough
Grease and sprinkle with flour a baking tin (Ø cm 22) or, if you prefer, line it with baking paper.
Pour the dough into the baking tin. Place on its surface the slices of nectarines kept aside and bake for about 30 mins or until an inserted toothpick in the middle of the cake comes out clean.
Allow the cake to cool on a wire rack before unmolding it.
Garnish the cake with the ground pistachio and sprinkle with abundant icing sugar.
