Artichoke clafoutis (recipe also in English on OPSD blog) This savory clafoutis recipe with fresh artichoke is a simple one and very interesting. Try this vegetarian savory preparation soon!
  • 2 eggs
  • 1 yolk
  • 200 ml of milk
  • 100 ml of dairy cream
  • 40 g of cornstarch, sifted
  • 50 g of grated Parmesan cheese
  • 125 g of mozzarella, diced
  • 1 large potato
  • 6 small artichokes
  • 1 lemon
  • 1 clove of garlic, peeled and chopped
  • extra virgin olive oil
  • dry white wine
  • salt
  • pepper
  • fresh chives
  • fresh mint
  • a knob of butter
  • breadcrumbs
  1. Preheat the oven to 220°C.
  2. Peel the potato, wash and dice it. Blanch for 3 mins. and then drain it.
  3. Clean the artichokes. Cut them into small wedges and put them into a bowl with water and lemon juice.
  4. In a large non-stick pan heat some extra virgin olive oil, add the clove of garlic and then brown the artichokes. Add also the potatoes and simmer with the wine until reduced.
  5. Cook over a medium heat for about 5 mins.
  6. Season with salt and pepper and add some leaflets of fresh mint and chives.
  7. Meanwhile, prepare the batter.
  8. In a bowl beat the eggs and the yolk, add the milk, the dairy cream, the cornstarch sifted, the Parmesan cheese and a pinch of salt and pepper.
  9. Remember to keep some small wedges of artichokes for the garnish of your clafoutis.
  10. Batter the artichokes, the potatoes and the diced mozzarella completely.
  11. Compose the clafoutis.
  12. Grease a baking pan (or a cake pan Ø 20-22 cm), scatter the breadcrumbs over it and the pour the mixture, adding the small wedges of artichokes kept aside.
  13. Bake for about 20-25 mins.
  14. Serve the clafoutis lukewarm.
