Easy and quick Italian cold pasta salad recipe

INGREDIENTI
  • 300 g of fresh pasta (or durum wheat pasta)
  • seasonal vegetables
  • (cucumbers, zucchini, Tropea onions. tomatoes, yellow and red bell peppers, …)
  • artichokes in olive oil (or other vegetables)
  • 130 g of olives and capers vegetable spread
  • feta cheese or quartirolo cheese
  • fresh basil
  • dried oregano
  • extra virgin olive oil
  • salt
  • pepper
COME PROCEDERE
  1. Fill a pot with abundant water and put it on the stove. When the water boils, add the salt and cook the pasta until “al dente”.
  2. Drain the pasta with a colander, pass it under cool water to stop the cooking and add a drizzle of oil.
  3. Remember to keep aside some tablespoons of its cooking water.
  4. Pour the pasta in an oven pan, previously lined with baking paper, and allow it to cool down.
  5. Meanwhile, clean and dice the vegetables.
  6. Dilute the vegetable spread with some cooking water of the pasta and mix well.
  7. Pour the cold pasta, the diced vegetables, the artichokes and the vegetable spread into a large bowl and stir to combine.
  8. Cut the feta cheese (or quartirolo cheese) into small pieces, dress them with oil, oregano and pepper and add them to the pasta.
  9. Add also some leaves of fresh basil and keep the pasta salad in the fridge.
  10. Before serving it, add a drizzle of oil, miw well and … enjoy your meal!
