ITALIAN COLD PASTA SALAD

- 300 g of fresh pasta (or durum wheat pasta)
- seasonal vegetables
- (cucumbers, zucchini, Tropea onions. tomatoes, yellow and red bell peppers, …)
- artichokes in olive oil (or other vegetables)
- 130 g of olives and capers vegetable spread
- feta cheese or quartirolo cheese
- fresh basil
- dried oregano
- extra virgin olive oil
- salt
- pepper
- Fill a pot with abundant water and put it on the stove. When the water boils, add the salt and cook the pasta until “al dente”.
- Drain the pasta with a colander, pass it under cool water to stop the cooking and add a drizzle of oil.
- Remember to keep aside some tablespoons of its cooking water.
- Pour the pasta in an oven pan, previously lined with baking paper, and allow it to cool down.
- Meanwhile, clean and dice the vegetables.
- Dilute the vegetable spread with some cooking water of the pasta and mix well.
- Pour the cold pasta, the diced vegetables, the artichokes and the vegetable spread into a large bowl and stir to combine.
- Cut the feta cheese (or quartirolo cheese) into small pieces, dress them with oil, oregano and pepper and add them to the pasta.
- Add also some leaves of fresh basil and keep the pasta salad in the fridge.
- Before serving it, add a drizzle of oil, miw well and … enjoy your meal!
