Honey-roasted carrots with harissa yogurt

INGREDIENTI
  • For the carrots
  • 1 pound carrots, washed, greens removed but reserved (for garnish)
  • 1.5 tablespoons olive oil
  • 1 tablespoon honey
  • 1.5 teaspoons harissa
  • Salt, too taste
  • Fresh cilantro (for garnish)
  • For the yogurt
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1.5 teaspoons harissa
  • 1 clove garlic, minced
COME PROCEDERE
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Lightly spray or brush a cookie sheet with olive oil.
  3. Leave carrots whole or cut thicker carrots in half (*) .
  4. Whisk together olive oil, honey, harissa, and salt. Toss with carrots.
  5. Place carrots in a single layer on cookie sheet.
  6. Roast in the oven for 30–35 minutes.
  7. Be sure to check after 20 minutes though, because baking times can vary depending on thickness of carrots.
  8. Meanwhile, whisk together yogurt, lemon juice, harissa, and garlic.
  9. Once fork tender, remove carrots from oven.
  10. Garnish with chopped cilantro and carrot greens.
  11. Serve with yogurt.
NOTE
(*) carrots shrink during roasting.
