Honey-roasted carrots with harissa yogurt

- For the carrots
- 1 pound carrots, washed, greens removed but reserved (for garnish)
- 1.5 tablespoons olive oil
- 1 tablespoon honey
- 1.5 teaspoons harissa
- Salt, too taste
- Fresh cilantro (for garnish)
- For the yogurt
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1.5 teaspoons harissa
- 1 clove garlic, minced
- Preheat oven to 425 degrees Fahrenheit.
- Lightly spray or brush a cookie sheet with olive oil.
- Leave carrots whole or cut thicker carrots in half (*) .
- Whisk together olive oil, honey, harissa, and salt. Toss with carrots.
- Place carrots in a single layer on cookie sheet.
- Roast in the oven for 30–35 minutes.
- Be sure to check after 20 minutes though, because baking times can vary depending on thickness of carrots.
- Meanwhile, whisk together yogurt, lemon juice, harissa, and garlic.
- Once fork tender, remove carrots from oven.
- Garnish with chopped cilantro and carrot greens.
- Serve with yogurt.
(*) carrots shrink during roasting.
