Red wine poached pears in puff pastry are an original dessert that will surely impress all your guests. The caramelised puff pastry wrapped around the poached pears brings them to a high level. If poached pears are already delicious on their own, wrapped in puff pastry are sensational. On the other hand, everything tastes better wrapped in puff pastry! Isn’t that right? Try my recipe. INGREDIENTI
  • 3 pears
  • 1 roll of rectangular puff pastry
  • 500 ml of water
  • 500 ml of red wine
  • 150 g of brown sugar
  • the zest from a lemon
  • ground ginger
  • 1 star anise
  • 1 cinnamon stick
  • 3 cloves
  • ½ vanilla bean, cut in half
  • 50/70 g of dark chocolate
  • walnuts
  • 1 teaspoon of ground cinnamon
  • 1 beaten egg
  • icing sugar
COME PROCEDERE
  1. Peel the pears and leave the stalks attached. Using an apple corer, core the pears from the bottom about halfway, until the seeds are out.
  2. Wash the lemon. Remove its zest with a vegetable peeler, keeping pieces long. Using a paring knife, remove white pith.
  3. In a large pot, combine water, wine, sugar, lemon zest, ginger, star anise, cinnamon stick, cloves and vanilla. Gently place the pears into the poaching liquid. The pears should be entirely submerged.
  4. Cover the pot with a baking paper round and simmer for 20/25 minutes or until the pears are tender but still firm.
  5. Meanwhile, make the stuffing. Chop the chocolate and the walnuts roughly and spice them with ground cinnamon.
  6. Gently drain the pears in a colander and allow them to cool at room temperature.
  7. Stuff the cavity of the pears with chocolate and walnuts.
  8. Put back the pot with the poaching liquid on the stove. Bring to the boil and reduce the liquid by simmering it. It should be thick and syrupy.
  9. Roll the puff pastry out and, using a sharp knife, cut it into strips (approximately 3 strips for each pear).
  10. Heat the oven to 200°C and line a baking sheet with baking paper.
  11. Starting from the stalk, wrap the pears in the puff pastry strips until you reach their bottom. Each new strip should slightly overlap with the previous one.
  12. Place the wrapped pears onto the prepared baking sheet and lightly brush the puff pastry with the beaten egg. Sprinkle with icing sugar and bake for about 15/18 minutes or until golden brown.
  13. Sprinkle again with icing sugar and serve your poached pears with the red wine syrup.
