A quick and delicious Spring recipe, the classic combination of asparagus soldiers with soft-boiled egg. Try them now!

INGREDIENTI
  • a bunch of asparagus
  • 4 large eggs
  • sliced bread (white, whole wheat, multigrains…)
  • bacon
  • salt
  • pepper
COME PROCEDERE
  1. Cut by hand the tips of the asparagus.
  2. Wash them under running water and steam for about 10 mins. They have to be tender but not mushy. Set aside.
  3. Remove the crust from the bread. Cut the slices in half and then flatten with your hand or a rolling pin.
  4. Put an asparagus on each slice of bread and roll up into a small roll. Wrap a slice of bacon around the rolls.
  5. Light the grill to the maximum power. Line a baking sheet with aluminum foil and bake the asparagus on each side, rotating them now and then, until they are golden brown (be careful because they can burn easily).
  6. Keep the asparagus warm until the time to serve. Meanwhile, prepare the soft-boiled eggs.
  7. Put the eggs into a pot filled with cold water. Put the pot on the stove and bring to the boil. Boil gently for 4 mins.
  8. Serve the eggs hot with the asparagus and, on the basis of your taste, add a grind of pepper and a pinch of salt.
