INGREDIENTI
For the bread
600 g of flour
300/350 ml of lukewarm water
15 g of salt
7 g of dehydrated baker’s yeast
10 g of sugar
extra virgin olive oil
For the stuffing
125 g of butter at room temperature
aromatic herbs (basil, parsley, mint, oregano, sage, rosemary or whatever you like)
1 red Spring onion
COME PROCEDERE
Prepare the dough.
In a large bowl, combine the flour, the sugar, the yeast, 2 tablespoons of oil and 300 ml of lukewarm water.
Use a fork to mix well and add the salt. If necessary, add to the dough also the remaining water, little by little.
Transfer the dough to a flour-dusted pastry board and knead for about 10 or so minutes, or until you have a smooth and elastic dough. Give a round shape to it and then, place it in a greased bowl.
Cover the dough with cling film, or a damp rag, and let it rise for at least 2 hours in a warm place.
When its volume has doubled, knead the dough for a few minutes and roll it out to form a rectangle (approximately 1 cm thick).
Preheat the oven to 220°C.
Prepare the stuffing.
Use a mixer to chop the Spring onion and the herbs finely and mix them with the soft butter.
Spread the herb butter homogeneously on the dough.
Starting from the narrow side, shape the dough into a ring.
Transfer the ring shaped bread to a baking sheet, previously lined with baking paper.
Use a sharp knife to make a few slits in its surface and bake for approximately 20 mis., or until it’s golden brown.
Let it slightly cool down before slicing.
