Prepare the syrup. In a pot, melt the sugar with the water. Bring to the boil and then remove the pot from heat.
Allow the syrup to cool down.
Place it in a blender with the blueberries, the juice and the zest from the lemon, some leaflets of mint and basil. Blend until they are well combined.
Pour the blueberry syrup into a freezer container. Close it well with its lid and keep in the freezer for at least 4 hours to chill.
After a couple of hours, crumble the ice obtained with a fork. Put the container back in the freezer.
Just before serving your snow cone, take the glasses out of the freezer and sprinkle some sugar on their borders.
Take the blueberry ice out of the fridge and, using a fork, crumble it again.
Fill the glasses with the blueberry ice and garnish your snow cone with some leaflets of mint - or basil - some blueberries and a slice of lemon.
