Flourless Chocolate Almond Caprese Cake is a traditional Italian cake. It is a dense, soft and moist flourless chocolate cake that will satisfy any chocolate lover. Ground almonds are used in place of flour so it is a perfect choice for those on a gluten-free diet. Try my recipe and taste this amazing dessert with vanilla ice cream or whipped cream.
  • 250 g of peeled almonds
  • 230 g of granulated sugar
  • 200 g of dark chocolate
  • 180 g of butter
  • 5 large eggs
  • unsweetened cocoa powder and red currants for garnish
  1. Preheat the oven to 190°C.
  2. Line a 20 cm spring-release baking tin with baking paper greased with oil or butter.
  3. In a pan, roast the almonds for some minutes. Place them in the bowl of a food processor and process until they are finely ground.
  4. Melt the chocolate and the butter in the microwave oven (or cook them in a double saucepan) and allow them to cool slightly.
  5. In a large bowl, combine the ground almonds, the melted chocolate and butter and the sugar. Stir well until they are full incorporated.
  6. Carefully separate the egg whites and the yolks.
  7. Lightly beat the yolks and mix them in the chocolate mixture.
  8. In a clean and dry bowl, whisk the egg whites until stiff.
  9. Gently fold them into the mixture stirring well from top to bottom with a spatula.
  10. Pour the cake mixture into the prepared tin and bake for about 40/45 minutes or until a wooden toothpick inserted in the middle of the cake comes out with some moist crumbs attached.
  11. Allow the cake to cool completely in the tin before removing.
  12. Dust with unsweetened cocoa powder and garnish with red currants.
  13. Serve, if desired, with a nice scoop of vanilla ice cream or whipped cream.
