Walnut and orange cake. This walnut cake is a delicious easy recipe, the cake is loaded with walnuts which infuse the cake with rich flavor, the perfect cake for a coffee morning or afternoon tea!

  • 200 g of shelled walnuts
  • 180 g of granulated sugar
  • 150 g of all purpose flour
  • 130 ml of orange juice
  • 120 ml of sunflower oil
  • zest from an orange, grated
  • 4 large eggs
  • 6 g of baking powder
  • a knob of butter to grease the tin
  • maple syrup (discretionary)
  • icing sugar (discretionary)
  1. Preheat the oven at 170°C.
  2. Grease a baking tin (Ø 20 cm) and line its bottom with parchment paper.
  3. Finely chop up the walnuts. Sift the flour and the baking powder. Put aside.
  4. Using a standing electric mixer fitted with a paddle attachment, or an electric hand mixer, beat the eggs for a couple of minutes.
  5. Add the sugar and beat well until the mixture is light and fluffy.
  6. Gradually add the flour and the walnuts to the eggs and sugar mixture. Add also the orange juice, the zest from the orange, the oil and mix until you have an homogeneous dough.
  7. Pour the cake mixture into the tin and bake for about 50/55 minutes, or until the tip of a knife inserted in the middle of the cake comes out clean.
  8. Take the cake out of the oven and cool it completely in the tin before unmolding.
  9. Serve lukewarm or at room temperature with maple syrup or icing sugar.
