Zimtsterne, German cinnamon star cookies (recipe also in English on OPSD blog). Zimtsterne, or German Cinnamon Stars are a gluten free cookies made with almonds and spices, these festive star-shaped cookies are chewy, crisp and similar to an almond macaron then iced with a mixture of egg white and sugar before baking.
  • For the cookies (the dough has to be prepared one day in advance)
  • 400 g of almond flour
  • 300 g of granulated sugar
  • 3 egg whites at room temperature
  • the zest from an orange
  • 2 tablespoons of ground cinnamon
  • 1 teaspoon of ground mixed spice (cinnamon, cloves, ginger, nutmeg)

  • For the icing
  • 125 g of icing sugar
  • 1 egg white at room temperature
  • 2 teaspoons of lemon juice
  1. For the cookies
  2. In a large bowl, combine the almond flour, the sugar, the zest from the orange and the spices.
  3. In another clean and dry bowl, whisk the egg whites with an electric hand mixer until stiff.
  4. Gently fold the egg whites, one tablespoon at a time, into the cookie dough, stirring well from top to bottom with a wooden spoon.
  5. Transfer the dough to a pastry board lightly dusted with icing sugar and, with the help of a rolling pin, roll it out to the thickness of approximately 1 cm.
  6. Use some different star-shaped cookie cutters to cut the cookies out of the dough.
  7. Cover a baking sheet with baking paper and transfer the cookies to it. Leave to dry overnight.
  8. For the icing
  9. In a clean and dry bowl, whisk the egg white, the lemon juice and the icing sugar with an electric hand mixer, stirring well until you have an homogeneous and fluid icing.
  10. Transfer the icing to a piping bag with a small and smooth nozzle and then glaze the cookies.
  11. Bake the cookies in the preheated oven at 160°C for about 8-10 minutes (depending on their size).
  12. Take them out of the oven and allow them to cool completely on a wire rack.
  13. Remember: during the baking, the cookies don’t become golden brown and they solidify only once are completely cooled.
You can keep for a long time your cinnamon cookies in a sealed jar.
