INGREDIENTI
250 g of sweet almonds, ground into flour
50 g of bitter almonds, ground into flour
3 egg whites
240 g of castor sugar + a little more for the garnish
zest from a lemon
COME PROCEDERE
Line two baking sheets with baking paper and set aside.
Whisk the egg whites until stiff (remember to keep aside a spoonful of foam).
In a bowl, combine the almonds flours, the sugar and the lemon zest.
A little at a time, add the whisked egg whites to the mixture and knead until you have a smooth and homogeneous dough.
Dampen the palm of your hands with the whisked egg whites kept aside and take some little balls from the dough.
Roll them in the sugar and arrange them at intervals in the baking sheets.
Allow the dough to dry in a place cool and dry for about 12 hours.
Bake the following day.
Preheat the oven to 180°C and bake the amaretti at this temperature for the first 5 mins.
Reduce the temperature to 160°C and bake again for approximately 15/20 mins (depending on their size).
Allow the amaretti to cool on a wire rack before serving them.
You can keep your soft amaretti in a sealed jar for a few day.
