INGREDIENTI
INGREDIENTS (for 6 small salami)
160 g of dark chocolate (min. 70%)
180 g of butter at room temperature
120 g of sugar
130 g of biscuits
100 g of toasted hazelnuts and pistachio nuts
50 g of unsweetened cocoa powder
For the garnish
twine for roast
3 tablespoons of icing sugar
COME PROCEDERE
Break the chocolate and melt it in a double saucepan over a low heat.
Remove from heat and set aside.
In a bowl, combine the butter and the sugar. Stir with a wooden spoon until you have a cream.
Put the biscuits into a plastic bag and break them roughly using a tenderizer or a rolling pin.
Chop the hazelnuts, roughly, in the food processor.
Add the chopped hazelnuts to the grain of biscuits, adding also the pistachio nuts.
Add the cocoa powder to the mixture of butter and sugar and stir well. Add also the chocolate melted and stir to obtain a dark and fragrant cream.
At this point, add the chopped hazelnuts, the grain of biscuits and the pistachio nuts and stir well with a wooden spoon.
Divide the mixture in as many parts as you want.
Put them on some aluminium foils and then, wrap and shape the mixture into a salami.
Put in the fridge for at least 2 hours (you can also keep them for some days or, if you prefer, you can freeze them).
Before serving, remove the aluminium foils and tie up your salami together with the twine.
Spread them with the icing sugar.
Your chocolate salami are ready to be sliced or presented.
